This recipe is very slightly adjusted from the Almond Joy Cookie recipe on Mom on Timeout. I tried out the cookies and knew I had to share them!

The cookies are sweet and coconutty, but definitely not overpoweringly sweet. They are the perfect level of sweet where you know you’re indulging in a delicious dessert, but not so rich that you are limited to only eating one! The coconut, chocolate, and almonds are a perfect combination and taste wonderfully nutty and chocolatey and delicious.

These cookies are so simple and easy to make! You just need four ingredients; unsweetened coconut, chocolate chips, chopped almonds and sweetened condensed milk.

Just measure out the dry ingredients into a large bowl, then pour the milk on top. Stir until all the dry ingredients are incorporated. The ‘dough’ should be sticky and clump together easily.

I used a medium sized cookie scoop to get the consistent shape and I would recommend you use one as well, as it will make things much simpler. However, you can also shape them with your hands if you prefer or if you don’t have a medium cookie scoop. The scoops are about 1/4 cup each.

Whether you are using a cookie scoop or a measuring cup or even your hands, after touching several cookies you will get a sticky coating of the sweetened condensed milk, and removing the dough from the scoop will become difficult. To make things easier, every few cookies, just give the scoop a rinse under the faucet and shake the excess water off. Then continue making a few more cookies.

Once you’ve scooped out all your cookies, through them into the oven for 10-12 minutes. Allow to cool for another 10 minutes on the pan and voila! Delicious almond joy cookies!

I really, very highly recommend you eat at least a few (dozen) of these cookies while they are still slightly warm. The inside of the cookie will be the softest then, and the chocolate will be melty. And really, isn’t there a rule that you have to eat at least one hot cookie?

Almond Joy Cookies

Yields: 20-24 cookies

Ingredients

  • 4 and 1/2 cups unsweetened shredded coconut
  • 1 and 1/2 cups chocolate chips
  • 2/3 cups roughly chopped almonds
  • 1 can sweetened condensed milk

Instructions

  1. Preheat oven to 325F
  2. Line baking sheets with parchment paper
  3. Put the coconut, chocolate chips, chopped almonds and sweetened condensed milk into a bowl and mix until everything is combined.
  4. Use a medium cookie scoop or your hands to make 1/4 cup cookies
  5. Bake for 10-12 minutes. The bottoms of the cookies should be starting to turn golden.
  6. Cool cookies for 10 minutes on the baking sheet before removing and eating!
Notes:
  • Between every couple scoops of cookie dough, rinse the scoop in water to make it easier for the dough to be released from the scoop.
