Healthy Chickpea Kale Salad

Yields: 2 servings

Ingredients

SALAD
  • 1 and 1/2 cups chopped kale
  • 1 can chickpeas, rinsed and drained
  • 1 can tuna, drained
  • 1 chopped green onion
  • 1 Tablespoon chopped basil
  • 1 Tablespoon chopped chives (optional)
DRESSING
  • 2 Tablespoons olive oil
  • 2 Tablespoons lemon juice
  • 1 and 1/2 Tablespoon red wine vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Pinch red chili flakes

Instructions

  1. In a small bowl, whisk together all of the dressing ingredients until combined.
  2. Combine all of the salad ingredients into and bowl.
  3. Add the dressing and mix together.
  4. Enjoy!
