These chicken tacos made with pulled chicken, shredded cabbage, carrot and chipotle lime sauce, makes for a delicious, healthy summer dinner.
Summer, or rather, summery-weather, arrived here so quickly. It feels like just a couple weeks ago that I was lamenting about how the snow and cold would never go away. And now it’s so warm that I’m running around the house turning off the lights to try to prevent the house from getting too warm.
I am really loving this weather. It’s also my first year having a year and a garden as an adult. I grew up with large yards and gardens as a child, but as an adult, I’ve either been too glued to the computer to realize there was an outside, or I’ve been living in apartments with no yard. So then at the end of last summer, we moved into a townhouse and it has a yard. Not just that, but plants and flowers.
So, now I have gardens to maintain, and I figured there couldn’t be too much to it. Just pluck out the weeds and water when it doesn’t rain. I couldn’t do any harm.
Boy, was I wrong.
In our weeding attempts, we accidentally pulled out a bunch of flowers! And I think that while I was trying to pull the surrounding weeds, I accidentally chopped up some of the tulips!
I’ve discovered just how much work pulling weeds actually is if you go for the roots! I’m sure I’m still making a serious mess of things, but I think I’m learning, and am just loving being outside a bit every day.
But enough about the wonders of the great outdoors, with the weather getting so warm, turning on the stove or oven sounds absolutely unbearable. No way do I want to be leaning over a hot stove or be heating the entire house with a hot oven.
That’s where these chicken tacos come in.
These tacos require no hot stove or oven. You start off with sour cream, mayonnaise, lime juice, chipotle peppers, sriracha, and cilantro. It is all blended together into a luxurious creamy sauce. The sauce is spicy and smoky, but the lime and cilantro balance it and keep it tangy and YUM.
I just love the smoky and spiciness of this sauce. It is spicy for sure, but not burn your mouth spicy, just rich in flavor.
Now, for these tacos I used my Easy Crock Pot Pulled Chicken, which combined with the sauce perfectly! But this will be delicious with any plain or taco-flavored pulled chicken. Even a shredded rotisserie chicken will work!
Then top the chicken with shredded cabbage and julienned carrots. When I first heard of putting cabbage on tacos I thought that was nuts. Crazyness. I always had put lettuce on my tacos. But, lettuce has a much lower crunch factor than cabbage, and also if you have it sitting on the warm, moist chicken for long, the lettuce will wilt and the cabbage will stay crunchy and awesome!
Finally, just drizzle on the chipotle lime sauce, and you are all set for an awesome and delicious summer dinner.
Chipotle Lime Chicken TacosYields: 8 tacos
IngredientsCHIPOTLE LIME SAUCE
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup cilantro
- 2 limes, juiced
- 2 chipotle peppers
- 1 Tablespoon adobo sauce
- 3 Tablespoons water
- 1 teaspoon sriracha
- 1/2 teaspoon salt
- 8 Soft tortilla shells
- 1 recipe of Easy Crock Pot Pulled Chicken
- 1 cup thinly cut green cabbage
- 1 cup thinly cut red cabbage
- 2 carrots, julienned
- Combine sour cream, mayonnaise, cilantro, lime juice, chipotle peppers, adobo sauce, water, sriracha, and salt in a food processor.
- Pulse for about 30 seconds
- Prepare tacos with pulled chicken, cabbage, carrot, cilantro and chipotle lime sauce.
