Easy Crock Pot Pulled Chicken

Yields: 6 servings

Ingredients

  • 2lb chicken breasts (fresh or frozen)
  • 1 Tablespoon olive oil
  • 1/2 cup salsa
  • 1/2 cup tomato sauce
  • 1/4 cup brown sugar
  • 1 can green chilis
  • 1 chopped jalapeño
  • 1 Tablespoon chili powder
  • 1 and 1/2 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon liquid smoke
  • 1/2 teaspoon oregano
  • 1/2 teaspoon black pepper

Instructions

  1. Place the chicken breasts in the crock pot, and drizzle the olive oil.
  2. Add in all  of the remaining ingredients and stir slights to combine
  3. Cover the crock pot, and cook on low for 6-8 hours
  4. Remove cooked chicken from the crock pot and pull apart using two forks. Place pulled chicken back into the crock pot and stir together with the sauce.
  5. Cover the crock pot and cook on low for 1 hour
  6. Drain excess liquid and serve.
