Last week I shared my all-out love for pesto and all of its goodness. I know, I may have seemed a little over the top, but I really am crazy about pesto. When I make pesto, I start to go on a bit of a pesto-spree, adding it to everything I can think of.

Today, I’m so excited to share one of my favourite uses for pesto. No, it’s not the very popular combination of pesto and pasta, although that is so good too!

No, today I am drooling over these delicious Grilled Pesto Chicken Sandwiches. I don’t think I have the words to describe how much I love these. Also, my favourite and harshest food critic (husband) described this as the best sandwich he’d ever had. Ever. I agree 100%.

What makes them so great? First, you start with delicious fresh, lemon, basil pesto. Then you mix in mayonnaise. Now I’m not a big fan of mayonnaise usually, but mixed with the pesto: AH-MAZING! You still all the brilliant and fresh flavours of the pesto but now creamy and smooth and a little bit sweet.

Then, you spread the mayo onto 2 slices of your favourite bread. If you’re like me, you’ll lay it on pretty thick. This is going to be the sauce of the dish, and you absolutely want the pesto mayo getting everywhere! Then, on one of the slices, pile on shredded chicken. Top that with some generous slices of mozzarella cheese.

Then, and the sandwich wouldn’t be complete without this, finish off this masterpiece with tomato slices. Yes, the pesto and mozzarella were begging to be joined by tomato.

Finally, top it off with the second slice of bread. Now you technically could eat this sandwich cold. And I’m sure it would be delicious. But I wouldn’t recommend it. You would be missing out if you did that. You definitely want to grill this beauty up a little bit just to get each end a little bit crispy and let the mozzarella get gooey, melty, and perfect.

To help the cheese melt before the bread burns, you can cover your frying pan to keep all the heat in and grill at a slightly lower temp. If your pans have lids, perfect! Otherwise, you can go the uber classy route like me and lake a cookie sheet or just a sheet of aluminium foil on top. It works, so it’s good enough for me.

You will not regret making this for lunch, or dinner. This sandwich is so savoury and delicious. It has a crispy outside and such a soft and delicious inside. The pesto mayo, mozzarella cheese, tender shredded chicken and juicy tomatoes make for a moist, saucy, soft and super flavourful, made in heaven sandwich.

I could really eat one of these every day. I’ve certainly had my fair share during my most recent pesto-spree.

Grilled Pesto Chicken Sandwiches

Yields: 2 servings

Ingredients

  • 4 slices of bread
  • 1/4 cup mayonnaise
  • 1/4 cup pesto (try this pesto recipe)
  • 1 and 1/2 cup shredded cooked chicken
  • 6 oz mozzarella cheese
  • 1 tomato

Instructions

  1. Heat 1/2 teaspoon of olive oil or butter in a large pan over medium heat
  2. Mix the pesto and mayonnaise together.
  3. Spread pesto mayo onto each slice of bread.
  4. On one slice, per sandwich, pile shredded chicken, mozzarella slices and tomato slices. Top with the other slice of bread.
  5. Place the sandwich on the pan, cover, and cook for 3 minutes, then flip to the other side for another 3 minutes, or until the cheese is melted.
  6. Eat immediately while the bread is crisp and the cheese is melty!
